The Trattoria Da Fagiolino in Cutigliano was opened in the early 1950s by Alvaro Innocenti, son of Cecco, nicknamed “Fagiolino” (little bean) because he was tall and slender like a young bean. This nickname inspired the name of the restaurant. In the past, the Innocenti family, in the same place where excellent cuisine now reigns, used to run a general store selling all kinds of goods, from nails to vegetables, mushrooms, and hardware items.

In his role as restaurateur, Alvaro was supported by his wife Pierina, a memorable cook from Bologna. Today, the trattoria is managed by the third generation of the same family: Luigi, son of Alvaro and Pierina, assisted in his work by his wife Paola and their daughters Stella and Diletta.
