A tale of land, family and tradition.
Every place has stories that deserve to be told. In Cutigliano, a medieval village in the Pistoia mountains, the story of a 16th-century farmhouse has become the story of a trattoria, a family and a community that lives off the woods, local produce and authentic flavours.
Here, cooking has never been a simple activity, but a form of respect for the land and its seasons. The deep connection with the territory has made Trattoria Da Fagiolino a natural reference point for those seeking sincere cuisine, made with selected ingredients, recipes handed down through the generations, and gestures that remain unchanged over time.
Cutigliano and its mountains tell their story through dishes that taste of the undergrowth, hand-rolled pasta and rural traditions. The trattoria is part of this collective narrative, in which memory becomes hospitality and taste becomes identity.
Timeline of key moments:
1905
The beginning: Luigi Degl’Innocenti moves to Cutigliano and opens a general store in the heart of the village, a place where he sells everything and begins serving wine.
1956
Alvaro Innocenti establishes Trattoria Da Fagiolino, a natural evolution of a place that has always welcomed travellers and mountain dwellers, offering the flavours of local tradition.
1965 – 1970
The quality of the cuisine is recognised with a Michelin star, a rare achievement for a mountain trattoria. This result is the fruit of authentic dishes, local ingredients and a cuisine that has never followed trends.
1974 – 2023
The tradition is consolidated by Luigi Innocenti, Alvaro’s son: the cuisine remains faithful to its roots, showcasing mushrooms, game, fresh pasta and everything that the forest and vegetable garden have to offer.
Today
The story continues with Diletta (Luigi’s daughter), Massimiliano (Luigi’s son-in-law) and Paola (his wife) in the name of quality and hospitality, recognised even by the most prestigious gastronomic guides. The trattoria remains a staple for those seeking an authentic experience, immersed in the culture of the Pistoia mountains.
